This week, we’d like to invite you into a room with no door…that’s right, a mushroom! (Someone stop us.)

If there’s anyone who’s probably heard all the mushroom jokes, it’s Joel Huyghebaert. He’s been growing and selling locally farmed mushroom varieties over the past few years, and all joking aside, getting rave reviews of his unique produce.

We won’t keep you in the dark (sorry!) about his methods. Joel uses a unique growing system to produce delicate, flavourful stems of varieties of shiitake and oyster mushrooms. The mushrooms are started using sterile plastic bags stuffed with wheat and barley straw, a readily available byproduct in our grain-growing province. The mushroom batches take about six to eight weeks to mature, and then they are ready for harvest.

When you order Stellar mushrooms, you’re getting the very freshest product available. Often the mushrooms are cut and sold within days, and never older than a week. Local chefs caught on to Stellar mushrooms early, and chances are you have already enjoyed a creamy or sautéed sensation featuring the oyster variety.
