Simple French Lentils Recipe (Serves 4 – 6 as a side)

Versatile pulses are great sources of fibre and protein, and they can make themselves at home in almost any style of dish you create.We love this one because it’s an easy and delicious way to get lentils on your plate! There are many variations out there but this is our favourite. Finishing it with the lemon is optional, but the bright citrus really adds to the dish.

Green lentils

Add these to your order:
Presto Farms Lentils 
White onions
Carrots 
Pine View Chicken Bone broth (optional)
Garlic
Camelina oil (optional; any cooking oil will do)

You will also need:
1 tsp Dried thyme
Salt & pepper to taste
1 lemon (optional)

Cooking directions

Prepare the ingredients:

1 cup lentils

2 cups chicken broth or water

3 tbsp cooking oil

2 carrots, diced

1 onion, diced

2 cloves garlic, peeled and diced

Salt & pepper to taste

1 tsp dried thyme

1 lemon (zest and juice)

1. Dice all vegetables.
2. Heat oil to medium-high in your favourite high-sided saucepan (choose one with a lid). Sauté the carrots, onion and garlic in the oil until they are tender and browned.
3. Stir in lentils, broth or water, and thyme. Bring to a boil, then reduce heat to simmer. (This tenderizes the lentils nicely so no rush – about 30 minutes.) Keep any eye on the liquid and top up if the lentils are soaking all of it up in the first 10 minutes.
4. Optional finishing step: Zest lemon. Squeeze lemon juice over the finished dish and garnish with lemon zest.
