This week, we want to introduce you to (or maybe just remind you of) Pine View Farms All Natural Meats chicken schnitzel. This time-saving, delicious way to eat chicken breast cooks quickly, has a light breading that turns crisp when you cook it, and has versatility beyond schnitzel with noodles (though we definitely recommend schnitzel with noodles.) Also, it’s made with four ingredients: chicken, flour, salt and pepper. Try finding that on the box of animal-shaped nuggets!

Since Pine View has already done the work, the chicken is beautifully flattened and lightly breaded – all you need to do is heat up the frying pan or the oven and dinner can be ready in under 15 minutes. Here are a few ways to give it a try:

Quick chicken fingers
Heat oven to 400 F. Line a baking sheet with parchment paper for easy clean up after supper! Defrost schnitzel and slice into chicken finger strips; place on cookie sheet and bake for about 10 – 12 minutes, until chicken appears white and cooked through and juices run clear. Serve as a snack, or make some veggies on the side and dinner is ready! (We like to whip up a quick honey dill dip: equal parts mayo & sour cream, 1 – 3 tablespoons of  liquid honey to taste, and fresh or dried dill to taste.)

Protein Snack Pack
Prepare schnitzel as above, or cook whole if you’re feeling too lazy to cut it up right now. When cooked, let cool, cut into strips, and store in the fridge in an air tight container for a quick, delicious protein boost – it’s tasty right out of the fridge. Great for kids’ (or grown ups’) lunch boxes, or for crispy chicken to toss on top of salad.

Classic Schnitzel with Noodles
Defrost schnitzel. Get your noodle water boiling. (We suggest Delloy Pasta Wide Egg Noodles.) Heat about 1 tbsp of oil (try Three Farmers camelina oil) in a skillet large enough to cook schnitzel, and drop chicken pieces, whole, into the pan when pan and oil are hot. Cook chicken for 3 – 4 minutes per side; you’re looking for a golden brown colour on the breading. Prepare egg noodles according to package directions; drain and toss with a bit more oil or butter as desired. Variations: add in some lemon pepper seasoning (try the organic Splendor Garden blend) with the chicken as it cooks, and sprinkle it over the noodles too; throw some peas in with the noodles as they cook to get a green thing on your plate!
